Polysorbate 20 is an emulsifier and surfactant that helps oil and water mix together in skincare products. Without it, your serum or toner would separate into layers. It also helps ingredients dissolve evenly so they actually work the way they're supposed to.
You'll find it in a lot of lightweight formulas, especially serums and essences. It's gentle enough for most skin types, though if you have very sensitive skin or are prone to irritation, it's worth patch testing first like you would with any new product. Some people find surfactants can feel a bit stripping, but polysorbate 20 is on the milder end of that spectrum.
