Disodium EDTA is a chelating agent, which means it grabs onto metal ions that might be floating around in your formula. Those metals can come from water or other ingredients, and if left alone, they can degrade your product or change its texture over time. By binding to them, disodium EDTA keeps everything stable and prevents unwanted reactions.
It also helps control viscosity, so it can thicken or thin a formula depending on what the formulator needs. You'll find it in a lot of skincare and haircare products for this reason. It's not doing anything to your skin itself, just working behind the scenes to keep the product itself in good shape.
